I would go for a max strength of 15x for hand holding. If comparing similar bino's then take into account the field of view (usually expressed in degrees or in ft at 1000yds). The bigger this is the, better the chance you have of finding your plane before is disappears. To find the plane, try this... Assuming you have a decent contrail (ie the cloud line left by the plane), then aim behind the plane and down. Scan up until you get to the trail and then follow the trail until you find the plane at the end of it. Oh and a big safety tip... Make sure the sun will not be in your line of sight, otherwise not finding a plane will be the least of your problems. Enjoy your planespotting.
