Is this a dish from Bon Appetit? I needed walnut paste for a dish a few years ago. I found it recently at the Cheese Store of Beverly Hills. I ended up substituting tahini for a later recipe, but following was what I found:

Food Processor - The regular sized on is WAY too big to be effective. The mini might work but I did not have one at that time.

Coffee Grinder - This worked perfectly, however I added 1/8 teaspoon of oil (I used peanut oil) when the sound of the grinder changed. I guess my recipe came out perfectly, it was my first time making it.

Meat grinder - Nuts will ruin it.

Mandolin or Herb Mill - The oily parts of the nuts get stuck.

The best device would be the food processor. You can see the product which allows you to grind to the consistency you desire/require. I recommend that you do the process in batches. If you overload the device some of the product will turn to a powder before the rest are ground. You will get some nut oil when processing but this will not hurt the processor. Hope this helps.

A mini food processor would be good, a regular food processer if you don't have a mini prep. You could use a coffee grinder then clean it really well after. I don't know what the nut oils would hurt if the coffee oils don't hurt it. It is hard to get them clean tho.
I don't think a meat grinder will work, I don't think it will grind it fine enough.
